Spring Shower

Today was a typically Sunday, we went too church without the girls since they spent the night at Aunt Beth's house.  So after church, Jim and I went to Big Apple for breakfast/lunch.  It was nice to go out just the two of us.  When we came home, Eva and Maggie both wanted to go to the park.  So when we were at the park for about 45 minutes to an hour, it all of a sudden started raining.  It was interesting because, I didn't have the car and it is typically a 10-15 minute walk to the park from our house and visa versa.  Needless to say, by the time we got home we were pretty went.  Eva and Maggie were not fans of getting wet and having to walk in the rain.  The only thing they liked about the rain was that the sun was still shinning while it was raining.  I was able to get some great shots of them playing at the park before the rain came.

Rosemary Roasted Chicken with Potatoes

This recipe is one of the premeasured ideas from McCormick and it was really good.  The above picture was taken right after I took it out of the oven.  If you want to try this dinner idea, the recipe is as follows. You will need: 2 tsp McCormick Paprika 1 1/2 tsp McCormick Crushed Rosemary Leaves 1 tsp McCormick Minced Garlic 1/2 tsp McCormick Coarse Ground Black Pepper 2 tbsp olive oil 1 tsp salt 6 bone-in chicken thighs, skin removed (about 2 lbs) 1 1/2 lbs small red potatoes, cut into 1-inch cubes Directions: 1. Mix oil, all of the spices and the salt into a large bowl.  Add chicken and potatoes; toss to coat well.  Arrange chicken and potatoes in a single layer on foil-lined 15x10x1-inch baking pan that is sprayed with no-stick cooking spray. 2. Roast, uncovered, in preheated 425 degrees F oven for 30 minutes or until chicken is sooked through and potatoes are tender, turning the potatoes occasionally.

Celebrating Eva's Birthday

Today at Eva's school, they celebrated her summer birthday and I stayed the entire day with her.  She loved having her mom with her.  I was able to snap a few pictures of her playing with her friends and when they sang Happy Birthday to her.
